Happy Monday! Did you know that there are only 11 days until Christmas?! I feel like the holidays snuck up on me waaaaaay too fast this year. I’ve got 4 important things to share with you today.

Can you believe this is week 50 of these gluten-free meal plans? In looking towards the new year, I’m trying to decide if I should keep creating them as-is, choose a different “theme” for them for next year (maybe low-carb/diabetic? super frugal? more seasonal?), or if you’d prefer I move on to spending my time making more recipes for y’all to enjoy.

Things are getting busy and rushed around here and I want to spend more time with family and really soak in the Christmas season, so I’ll be taking some time off from blogging from now until the beginning of the new year to celebrate Christmas and my 5 year anniversary with my hubby. This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed.
Monday: My Bean and Cheese Pupusas (gluten-free, vegetarian, vegan option)
Tuesday: Minestrone Soup from The Wetherills Say I Do (gluten-free with gf pasta, vegetarian, vegan)
Wednesday: Sweet Potato & Apple Quinoa Salad with Maple Dressing from A Savory Feast (gluten-free, vegetarian)
Thursday: Cranberry Apple Chicken and Rice Skillet Dinner from Weary Chef (gluten-free)
Friday: Pizza Night! Pizza Stuffed Chicken from DIY Budget Girl (gluten-free)
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)
