Another Meal Plan Monday featuring low-carb recipes!
Welcome back to Meal Plan Monday! This past week I tagged along with Hubby for his work trip to Phoenix. I had dreams of sitting and blogging by the resort pool, but Phoenix in August turned out to be upwards of 110 degrees each day, even breaking 118 on the last day we were there. (Sooooo hot!) That meant the only dips I could get in were after dark when the sun wasn’t boiling the pool water. Instead of blogging by the pool, I found some great (air conditioned) restaurants and coffee shops to hide out in, and got to catch up with several dear friends.
I even got the chance to finally meet up in person with Madison from The Wetherills Say I Do! She took me to a wine cafe called Postino where we ordered this crazy bruschetta tray that had combinations like brie & apples with fig spread, and smoked salmon and pesto. We also just had to order a cheese and fruit tray. (She’s a foodie after my own heart!) So many amazing wine choices too. It was so awesome to hang out with her in person and after all the facebook chatting and skype conversations we’ve had, it was pretty much like we had been friends in person for ages. (Blogging friends really do make the best friends!) She and I have some cool things in the works to share with y’all later this Fall, and I can’t wait to talk about them.
I’ve been getting a lot of requests for some low-carb meal options from readers and from my hubby, so this week is all about the low-carb recipes. I actually didn’t realize that low-carb looked this delicious until I started looking into recipes, so we may be sticking toward this end of the lower carb spectrum for a while. Enjoy!

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Monday: Chicken and Asparagus Lemon Stir Fry from Skinny Taste (gluten-free, low-carb) – I’ve discovered that we will eat pretty much any vegetable that has been stir fried, but this asparagus and chicken is especially yummy!
Tuesday: Spaghetti Squash Carbonara from Peace Love and Low Carb (gluten-free, low-carb) – I usually pierce my spaghetti squash with a fork and cook it for 15-20 minutes in the microwave then press out any excess water using a cheese cloth.
Wednesday: Huevos Rancheros Casserole from A Zesty Bite (gluten-free, low-carb if you skip the corn tortillas) – One of my favorite Mexican breakfast dishes has been turned into a casserole! I used turkey sausage instead of pork sausage to cut some extra fat.
Thursday: Pistachio Crusted Salmon from Nom Nom Paleo + a side salad (gluten-free, low-carb) – I used 4 frozen salmon filets for this recipe.
Friday: Chipotle Turkey Burgers with Guacamole from Domesticate Me +a batch of my Jicama Fries (gluten-free, low-carb) –This turkey burger is packed with chipotles and garlic inside the patty and topped with bacon and awesome fresh-made guac. Saturday: Date Night – Eat Out.
