Can you believe it’s almost back to school time? I feel like summer is just beginning, but here it is, almost over! Hubby and I have been trying to get in the end of our Summer Bucket List and are taking one last trip together before it’s time to pull out the sweaters and pumpkin spice. That means no new recipe for you today, but I hope you’ll still enjoy this meal plan!

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Monday: Cabbage and Black eyed Pea Stuffed Zucchini Boats from Maebells (gluten-free, vegetarian option)
Tuesday: Crustless Corn and Zucchini Quiche from Cooking and Beer (gluten-free, vegetarian)
Wednesday: Healthy Crock Pot Taco Spaghetti Squash from Real Housemoms (gluten-free, vegetarian)
Thursday: Roasted Vegetables and Sausage from Delicious Meets Healthy (gluten-free, vegetarian option)
Friday: Pizza Night! Grilled Hawaiian Pizza from My Cooking Spot (gluten-free if using gf dough)
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)
