Hubby and I went on vacation this past week and it was amazing! We snuck off to the mountains in south western Colorado and stayed in a small town in almost the middle of nowhere. We had been planning to camp for a couple weeks, but Hubby came down with pneumonia a few weeks ago and then passed it to me (not fun at all!) so sleeping on the ground in the cold and damp didn’t sound like something we should be doing. Instead, we stayed in a condo and took a few day trips to a reservoir in the middle of nowhere and enjoyed a relaxing time of peace and quiet and mostly disconnected from our computers and social media. (I did sneak on Instagram a few times to share a couple photos like the ones below, but we didn’t check work emails or take computers with us.) This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed. **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**
Monday: Balsamic & Goat Cheese Chicken Sandwich from Garnish & Glaze (gluten-free if using a gf bun) – I am all about the grilling this summer, and this recipe combines grilled chicken with balsamic vinegar and PRETZEL BUNS!!! Be still my heart!
Tuesday: Delicious Turkey Stuffed Eggplant from Living Sweet Moments (gluten-free, vegetarian option with a turkey substitute) – I love stuffed veggies. This one is a healthy recipe that doesn’t taste healthy!
Wednesday: Farmers Market Roasted Vegetable Sandwich with Skinny Pesto from The Housewife in Training Files (gluten-free if using gf bread, vegetarian, vegan option) – My basil plant is growing like gangbusters, so this is one of my favorite ways to use it up. We’re planning to take this for a picnic in the park with some fancy potato chips and sparkling water.
Thursday: Sweet Potato & Chicken Quinoa Salad with Feta from A Savory Feast (gluten-free, vegetarian option, vegan option) – We eat a lot of roasted veggies and lighter meals in the summer. This dish is filling and is great both hot or cold, so it’s a perfect go-to summer meal.
Friday: Pizza Night! Eggplant Parmesan Caprese Skillet Pizza from The Crumby Cupcake (gluten-free if using gf dough and gf bread crumbs, vegetarian) – This is a pizza recipe that’s made in a skillet AND tastes like eggplant Parmesan. You will love it!
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)

Ahh, I always love seeing my recipes on your meal plan! It’s so fun when people actually try them. Instagram a pic if you get a chance so I can see how it turned out! Quinoa salads are my jam lately. There are soooo many ways you can get creative and make them with whatever you have in the house.

There is actually a printable (or mobile-friendly) pdf that’s linked right below where it says Meal Plan Monday.
The text says: “Click Here for the (Now Mobile-Friendly) Weekly Shopping List Printable!”
The recipes are linked again at the top of the shopping list pdf, but you’ll still have to visit the sites to get the actual recipes though since I don’t own all of them. You can visit each of them and print the recipes out pretty fast though. 🙂 Let me know if you have any issues!
