Happy Monday! I’m happy to say that Colorado has sunshine today, which means I can finally bust out more summery recipes. I may call this squash week because I just realized that 3/5 recipes are made with squash. It’s SO cheap at the grocery store right now though because it’s summer squash season. That’s the best part about eating seasonally for sure. Let me know if you have any seasonal ingredient requests and I’ll be happy to test out some recipes that use them!
I’m running a bit behind on this post today because our weekend was just so full that I accidentally fell asleep at 7pm last night. One of those “I’ll just lay down and check my phone for a moment then get to work on the post” type evenings and suddenly here it is, Monday morning. Does that ever happen to anyone else? I think my sweet hubby tucked me in because I was under the covers when I woke up. (He’s the best!)
I spent yesterday at a baby shower for one of my best friends celebrating her baby girl that’s due in August, and I can’t even express how CUTE everything was. It was pretty much all of the most adorable baby shower pins from Pinterest in one place. Someone even tackled the carved watermelon baby carriage you see pinned so often, and it actually looked just like the pin! What did we do before Pinterest? I was taking photos with a friend’s DSLR, so I don’t have any to share at the moment, but I will definitely post some later.

Wednesday: Turkey & Ricotta Spaghetti Squash Crustless Quiche from A Savory Feast (gluten-free, vegetarian option)
Thursday: Paleo Thai Mint Chicken Stir Fry from Sweet C Designs (paleo, gluten-free) – I doubled this recipe.
Friday: Pizza Night! Prosciutto and Arugula Pizza from The Kitchn (gluten-free if made with gf dough)
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)

I make almost all the recipes a week ahead of time, so I can vouch that they’re all super yummy! We had your quiche last night and kind of ate it all before I could take a photo to share on IG. Yum!!
