This Low-Carb Slow Cooker Tomatillo Soup is a quick and flavorful weeknight meal. This is also the first week of Low-Carb Crocktober 2018 where I share meal plans using only a slow cooker for the month of October! This week’s meal plan is at the bottom of the post.
One of my favorite comfort food recipes of all time is my Tortilla Soup. Since corn tortillas don’t really fit into a low-carb diet, I wanted to re-work my recipe with some more keto-friendly ingredients. It also happened that my husband absolutely loves tomatillos and we grow them in our garden each year, so this is a win-win tomatillo soup recipe. We make it at least twice a month during summer tomatillo season.
This recipe calls for a jar of tomatillo salsa as a shortcut, but it tastes amazing if you want to go through the effort of roasting your own tomatillos and blending it into a salsa verde. With a toddler at home now, time has become quite precious, so I’ll take the shortcuts where I can get them! I hope y’all enjoy this recipe as much as we do!
Low-Carb Slow Cooker Tomatillo Soup

Ingredients
- 1.5 lbs boneless skinless chicken thighs or chicken breasts
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, minced, seeds and veins removed (this is a mild level, add more for more spice)
- 1/2 lb (about 6 medium) ripe tomatillos, (husks removed) rinsed and diced
- 1 (15oz) can green enchilada sauce (mild, med, or hot depending on your preferred spiciness level)
- 1 (16 oz) jar tomatillo salsa
- 6 cups chicken or vegetable broth (add more for a brothier soup)
- 1 Tablespoon cumin
- 1/2 Tablespoon chili powder
- 1 teaspoon garlic powder
- salt & pepper to taste
For serving:
- lime wedges
- sour cream
- cheese
- avocado
- cilantro
Instructions
- Combine ingredients in crock pot.
- Cook 6-8 hours on low or until chicken is cooked through and begins to fall apart.
- Shred chicken and return to soup.
- Top with cheese, sour cream, etc.
