Ingredients

- 2 large naan flat breads
- 1/4 cup fig butter or fig jam
- 6 slices cooked bacon
- 1/4 cup goat cheese
- 1 handful arrugula
- 2 tablespoons toasted pine nuts (optional)
Instructions
- Divide the fig butter between the two flatbreads and spread it out with the back of a spoon like you sauce a pizza, leaving a bit of a crust around the edge.
- Tear or dice the bacon into 2 inch pieces and spread it on top of the fig butter.
- Sprinkle the goat cheese on top.
- Toast the flatbread in a toaster oven or broiler for approximately 2-3 minutes, or until the crust begins to crisp up and the goat cheese begins to melt. (Leave the door cracked and watch it very closely if you use a broiler.)
- Sprinkle with arrugula and pine nuts.
- Slice it up as desired and serve!
Notes
- Gluten-free: Can be made with GF tortillas, pizza crust, or flatbread instead of naan.
- Vegetarian: Swap in your favorite bacon substitute. (Crispy shallots, roasted mushrooms, or roasted potatoes would sub well here.)
- Vegan: Swap out the bacon, use a vegan flatbread and leave off the goat cheese.
