Your Crocktober 2015 Week 2 Meal Plan is here! The Crocktober challenge is to use your slow cooker every day for the month of October. To help with that, I’m sharing slow cooker meal plans and new slow cooker recipes each week.
Things have been a bit crazy here in the Powers house lately. For almost 2 months, I was not home for more than a week at a time before travelling somewhere new or having house guests stay with us. It’s been a lovely time, and I knew it would be super busy when I originally scheduled everything, but now I’m ready to be settled for a while and no longer living from a suitcase.
Crocktober has come at probably the perfect time for a season of slowing down and catching my breath in all things related to keeping up our household. As long as I drag myself out of bed at a reasonable hour in the mornings and/or prep my recipes the night before, I’m able to toss it all in my crockpot and have dinner figured out and ready to go when Hubby gets home even if I’m still working away at a new website design and have completely forgotten dinner. (Does anyone else get in the zone at work and forget to eat or is it just me?)
Earlier this week, I was back ahead of my game and had a lovely recipe I was planning to share with you today. Then, we got hungry on Friday and ate the rest of it for lunch before I remembered I was saving it to take some photos. (Food blogger problems…) So, now you will unfortunately have to wait until Tuesday for a new recipe for my Slow Cooker Chicken and Vegetable Tortellini Soup. (It’s so worth the wait though!) So be sure to come back tomorrow, and in the meantime, you can enjoy these other yummy recipes an meal plan from my friends!

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed. **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**
Monday: My Crock-Pot Corn Chowder with Parmesan Rind and Pancetta (gluten-free option, vegetarian option)
Tuesday: Crockpot Chicago Style Italian Beef from Bright Green Door (gluten-free if you make your own gf au jus mix. I used this recipe.)
Wednesday: Crockpot Lasagna from From Bisons to Buckeyes (gluten-free if using gf lasagna noodles)
Thursday: Crock Pot Picadillo from Skinny Taste (gluten-free)
Friday: Tomato Parmesan Slow Cooker Soup from Life Currents (gluten-free, vegetarian) – Served with a side of grilled cheese sandwiches of course!
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)
