This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed. **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**
Monday: Scrambled Egg and Roasted Asparagus Toasts from Foodie Crush (gluten-free if using gf bread, vegetarian option) – I love having breakfast for dinner, and these toasts are unique seasonal option for brinner.
Tuesday: My Mexican Lasagna (gluten-free option, vegetarian option) – This lasagna has all the flavors of a 7-layer dip with noodles layered in. It’s always requested by my husband, and freezes super well for lunches later.
Wednesday: My Slow Cooker Chicken Coconut Curry (gluten-free) – We love curry, and this dish is a favorite because it cooks itself while you’re gone at work all day. The smells may cause you to drool over the crock pot all day.
Thursday: 15 Minute Lo Mein from Damn Delicious (gluten-free option, vegetarian option) – Lo mein is one of my go-to dishes when we get take-out. I’ve always thought it was difficult to make, so I was so excited to find a quick and delicious recipe!
Friday: Pizza Night! Spinach and Artichoke French Bread Pizza from What’s Cooking Love (Gluten-free with gf french bread, vegetarian) – French bread pizza is one of my favorite lazy dinners since it comes together so quickly. This one has plenty of great toppings.
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)
