Description
These fun bird nest treats are made with creamy butterscotch and cookie butter poured over chow mein noodles and topped with candy eggs.

- 1 bag (12oz) chow mein noodles
- 1 bag (11oz) butterscotch chips
- 1 cup Trader Joe’s Cookie Butter or Biscoff spread (about 2/3 of a jar)
- A medium bag of your favorite small egg-shaped candies. (I used peanut M&M’s, but there’s many options.)
Instructions
- In a microwave safe bowl, combine the butterscotch chips and cookie butter.
- Microwave on half power for 1.5 minutes.
- Give it a good stir, then microwave again for 45 seconds on half power.
- Stir again until the last of the butterscotch has melted, or return to the microwave for another 30 seconds on half power if it still needs more time.
- Add the chow mein noodles to a medium bowl. Pour the butterscotch cookie butter mixture over the top of the noodles and gently stir to coat the noodles.
- Give it just a minute to cool down so you can handle it if it’s too warm to touch.
- While the mixture is still warm, use your fingers or a large spoon to gently shape the coated noodles into round nest shapes on a parchment or silpat lined cookie sheet. You can make them as large or as small as you’d like. I like to leave a little dip in the center to hold the eggs.
- While the butterscotch is still wet, add the candy eggs on top and gently press to get them to stick.
- Allow nests to cool on the counter or in the fridge until the butterscotch has set again, about 10 minutes.
- Store in an airtight container.
Notes
- Gluten-free: Replace the chow mein noodles with gluten-free pretzels and swap the cookie butter for peanut butter or nutella.
- Vegetarian: These are vegetarian.
- Vegan: Use vegan butterscotch or chocolate chips.
