Scratch-made vegetarian black bean burgers with the perfect burger texture + Meal Plan Monday #4.
As I’ve said before, some of my favorite dishes have come into being out of necessity. Several years back, I was asked to cater a weekend dance event that was being held in honor of a friend’s birthday. This was back before the uptake in dietary restrictions, and less than 30 minutes before lunch was scheduled to be served, I was informed that we had 2 vegetarians that would be joining us at the last minute, and “could you make sure they have a substantial meal too?” Enter panic mode!!
I didn’t have a well-stocked kitchen as I was cooking at someone else’s home in a different state, but I did manage to scrounge a can of black beans, a few random spices, some flour and oats, and a can of mushrooms. Through some trial and error, I managed to pull together these black bean burgers that were a major hit. Such a big hit actually, that I was told they were the “best black bean burgers I’ve ever tried” and asked what brand they were so they could be purchased later. Jaws dropped when I said I threw them together myself at the last minute. (Success!)
These aren’t your typical dry, crumbly black bean burgers. The oats and mushrooms in these burgers give it an almost burger-like texture, the ranch powder adds a burst of unexpected flavor, and lightly frying them gives them enough of a crust to remain firm when you bite into them. They stay in one piece all the way until the last bite!

Description
Scratch-made black bean burgers with the perfect burger texture.
Ingredients
- 1/2 onion, diced (or instant onions)
- 2 15oz cans black beans, rinsed and well drained
- 1 6.5oz can mushrooms
- 1/4 cup flour
- 1/4 cup oats (or breadcrumbs or crumbled bread used)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp seasoned salt
- 1/2 tsp powdered ranch dressing mix
- salt and pepper to taste
Additional
- oil for frying
- Burger buns and toppings
Instructions
- Sautee the onions till soft, about 3-5 minutes.
- In a medium bowl, mash the black beans with a potato masher or fork until mostly smooth. (You want some bean chunks to add texture.
- Add sauteed onions and the rest of the ingredients to the black beans, adding the flour a few tablespoons at a time to combine well. Mixture will be thick.
- Form bean mixture into 6 patties, approximately ½ inch thick.
- Fry patties in a small amount of oil until slightly firm, about 3 minutes per side.
Notes
- Makes 6 patties
- Gluten-free: Use gf flour and certified gf oats
- Vegetarian: These are vegetarian
- Vegan: Leave out the powdered ranch mix.

Thursday: Chickpea Stuffed Eggplant With Couscous And Tahini Sauce from Dishing Up The Dirt (gluten-free if you swap couscous for quinoa, vegan) – I love eggplant, and stuffing it with chickpeas and couscous makes for an amazing dinner!
Friday: Pizza Night! with my Perfect Pizza Dough and leftover chicken chili (vegetarian option) – I love putting chicken chili on my pizza!
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)

This sounds amazing! We are not vegetarian, but we love good vegetarian recipes. To help our budget and health, we try to do several vegetarian meals a week that still have good protein. I love black bean burgers and have been trying to find a good one. I like the simplicity of this recipe. Definitely pinning it!

I have never made veggie burgers before because it has always intimitaded me and I can never find a good recipe! But these look SO good! They looks like they’re not too soft and crumbly which most veggie burgers are. They seem sturdy and that ranch seasoning probably makes them delicious! Pinning!
