Description
A savory waffle with bacon and chives
Ingredients
Scale
- *2/3 cup white flour (or gluten-free)
- *1/2 cup yellow cornmeal
- *3 Tbsp granulated sugar
- *1 Tbsp baking powder
- *1/4 tsp salt
- 2 Tbsp vegetable oil
- 1 egg
- 3/4 cup milk (or non-dairy milk)
- 1/4 cup crumbled bacon
- 2 Tbsp dried chives (4 tbsp fresh)
- 1/2 cup shredded cheddar
- *(1 box of Jiffy corn muffin mix may be substituted for the flour, cornmeal, sugar, baking powder, and salt.)
Variations (choose 1 addition)
- 3/4 cup shredded sweet or regular potatoes
- 1 (4.5oz) can diced green chilies, drained
- 1/2 can of corn
Instructions
- Combine dry ingredients together in a medium bowl.
- Add in remaining ingredients and stir thoroughly until batter is smooth.
- Prepare as you would normal waffles according to the directions on your waffle iron. (Or make pancakes if you don’t have an iron.)
- Makes 4 large waffles.
Notes
- It may expand a bit more than regular batter, so be conservative when you pour it in the iron.
- Top with chili, fried chicken, pulled pork, a poached egg, pot roast, a burger, or just some warm honey butter or syrup.
