I’m in love with these savory Bacon and Chive Cornbread Waffles.
In our house, we LOVE waffles. I remember being a little kid and waking up to my dad surprising us with waffles on a Saturday morning. In college, I found a loophole in policy that allowed me to have a waffle iron in my dorm room. Boy did I get popular! One of my dorm hall-mates gifted us with a fancy 4 waffle iron for our wedding, and we have used it almost every Saturday morning since then. We typically make our Saturday morning waffles with Alton Brown’s dry mix I featured as one of My Top 5 Go-To Recipes, but I like to mix it up sometimes, especially when we have breakfast for dinner.
In the last few years, I’ve become obsessed with savory waffles and have been experimenting with waffles at meals other than breakfast. These savory bacon and chive cornbread waffles are the perfect base for your favorite chili, a poached egg, some fried chicken, pot roast, or just some whipped honey butter. The best part is how fast they are to throw together.
Bacon and Chive Cornbread Waffles

Description
A savory waffle with bacon and chives
Ingredients
- *2/3 cup white flour (or gluten-free)
- *1/2 cup yellow cornmeal
- *3 Tbsp granulated sugar
- *1 Tbsp baking powder
- *1/4 tsp salt
- 2 Tbsp vegetable oil
- 1 egg
- 3/4 cup milk (or non-dairy milk)
- 1/4 cup crumbled bacon
- 2 Tbsp dried chives (4 tbsp fresh)
- 1/2 cup shredded cheddar
- *(1 box of Jiffy corn muffin mix may be substituted for the flour, cornmeal, sugar, baking powder, and salt.)
Variations (choose 1 addition)
- 3/4 cup shredded sweet or regular potatoes
- 1 (4.5oz) can diced green chilies, drained
- 1/2 can of corn
Instructions
- Combine dry ingredients together in a medium bowl.
- Add in remaining ingredients and stir thoroughly until batter is smooth.
- Prepare as you would normal waffles according to the directions on your waffle iron. (Or make pancakes if you don’t have an iron.)
- Makes 4 large waffles.
Notes
- It may expand a bit more than regular batter, so be conservative when you pour it in the iron.
- Top with chili, fried chicken, pulled pork, a poached egg, pot roast, a burger, or just some warm honey butter or syrup.

Savory waffles are quickly becoming my favorite! Fresh chives would be amazing in these. I only had freeze dried chives on hand.

chives? I don’t think I ever thought of using them in waffles. But I have also experimented with savoury waffles so probably this combination is not that bad.

I started out to make a baked potato to go with our pulled pork and ended up with these instead. (No potatoes.) I guess that’s how the fresh chives stayed in the mix. They’re incredibly yummy though. I put them out at a brunch and they disappeared before the regular waffles!

If you don’t find a waffle iron, it can actually be made into pancakes (or baked in a cake pan like regular cornbread!)

Hi Lindsey. Good question, I’m sorry that wasn’t clear! All three additions are completely optional. You don’t need to choose any of them (only the ingredients under the “Ingredients” heading.)
I was trying to explain that if you wanted to mix it up, you didn’t want to have potatoes and green chile and corn and all of the original ingredients too – the waffles would be crazy packed!
