These Cookies n’ Cream Pop-Tart Ice Cream Sandwiches are dangerously easy to make.
There’s an amazing ice cream place near my house, Ice Cream Riot, that sells these GIGANTIC ice cream sandwiches that use Pop-Tarts rather than traditional cookies for the outside layers. There are about a million different flavor combinations, but one of our favorites is the cookies and cream sandwich. If you live in the Denver area, I highly recommend that you go get one of these from the source because you can’t beat their scratch made ice creams!
For those of you who aren’t in Denver, I thought it would be fun to try to create my own version of a Pop-Tart ice cream sandwich using store bought ice cream. (I have an ice cream maker, but ain’t nobody got time for that!) The experiment was a really excellent one, and may become one we repeat with different flavor combos throughout the summer. (I’m going to go ahead and declare this the summer of frozen treats because I anticipate a *lot* of popsicles and ice cream sandwiches this summer.)
We experimented with a few different methods for filling the sandwiches, and the easiest one in my opinion was to soften the ice cream, spread it out into a thick, even, 1″-2″ layer on some parchment paper in the bottom of a jelly roll pan or 9×13 pan, and re-freeze it until it was really solid. Then you just cut Pop-Tart size rectangles from the ice cream and stick them between two Pop-Tarts. I may or may not have gotten super technical, busted out a ruler, and calculated that I needed to freeze a 9″ x 10″ rectangle of ice cream to get my 6 sandwiches. Since a Pop-Tart is about 3″ x 5″ here is a chart for how I sliced the ice cream sheet. (We don’t mess around when it comes to ice cream sandwiches in our house!)
I wrapped them in plastic wrap and re-froze them at that point because I wanted frozen Pop-Tarts and a really solid sandwich so it would stay together longer. (Pro tip: I use this same method to make perfect, pretty ice cream sandwiches with my cookies too! Just use a circle cutter.) When we tried (impatiently) scooping the ice cream directly out of the carton and pressing it between the pastries, the Pop-Tarts tended to crack and squish and the ice cream started dripping from all the edges way too fast because it wasn’t solid enough. So it was equally delicious, but a lot messier! (I totally understand if you choose the impatient method though.)
So overall, these are a killer hit! We’re already dreaming up new Pop-Tart and ice cream combos, and our friends are asking when they get to come over to enjoy them with us. I guess it’s time to stock the freezer! I can see these being a super fun and easy treat to make with your kiddos too (you can always cut them in half so they’re not quite the crazy sugar bomb.) Cookies n’ Cream Pop-Tart Ice Cream Sandwiches

Ingredients
- 1 half gallon of cookies n’ cream ice cream (or your favorite flavor)
- 12 cookies n’ cream Pop-Tarts (or your favorite flavor)
- parchment paper
- metal jelly roll pan or 9×13 pan
Instructions
- Soften the ice cream on the counter or in the microwave until it’s soft enough to spread, but not melted.
- Line the pan with the parchment paper coming up over the edges to make the ice cream easy to remove once frozen.
- Using a strong spoon, spread the ice cream out into a 9″ x 10″ rectangle, about an inch thick (or more if you want thick sandwiches!)
- Place in freezer for at least 2 hours, or overnight so the ice cream can freeze fully solid again.
- Remove from freezer and slice the sheet of ice cream into six 3″ x 5″ rectangles (See the diagram above or just eyeball it.)
- Place each section of ice cream in between pairs of Pop-Tarts, wrap in plastic wrap, and place back in the freezer for another hour or so to make sure the sandwiches are really frozen solid.
- Unwrap and enjoy immediately!
- For longer storage – wrap them in parchment or freezer paper and hide them from your husband. 😉
Notes
- Gluten-Free: Cookies n Cream isn’t usually gluten-free, but it will definitely work with gf ice cream and gf pop-tarts (Glutino makes some good ones!)
- Vegetarian: These are vegetarian.
- Vegan: Frosted Pop-Tarts aren’t vegan, but you can swap unfrosted pop-tarts and your favorite vegan ice cream!
