This 30 Minute Baked Italian Chicken is a staple in our house. It’s so yummy, but quick & easy to make!
If your home is anything like my home, there are plenty of nights when you don’t feel like putting a ton of work into cooking, but you really just want to get dinner on the table. Sometimes Often on nights like that I’ll give in and order takeout or pull out a pre-packaged meal from the frozen section at Costco. (Thank goodness for Costco right?) But sometimes I’ll still pull things together long enough to pull out some chicken breasts, put this recipe together, and bake them in the oven while I finish up binge watching Netflix working on client websites for the day. And since we’re on the topic of what really happens at home, I thought I’d share some confessions with you.
Confessions of a Food Blogger
I know it probably seems like us food bloggers live glamorous lives of beautifully staged Pinterest meals, organic produce, and eating all the yummy things we can find at our local foodie hot spots. But I’m here to be real today and to confess that it’s really not all that glamorous to be a food blogger. What you won’t usually see on our blogs are the family members patiently waiting to eat their food while we take just “one more photo” of it for the 15th time. You won’t see the trash full of takeout boxes because I was feeling uninspired to cook because being creative in the kitchen is now my “job.” You won’t see that the perfectly styled, gorgeous dish of food we photographed is only enough for one person, so the rest of the family at dinner gets to serve themselves “normal”, boring (but definitely still yummy) plates of food.
You won’t see the blurry, botched photo set we had to re-shoot, or the hours of tears and possible probable swear words that go into building our blogs and making our technology work for us. You won’t see the procrastinating until the last minute to meet a post deadline (It’s 5pm on Sunday night (yes, again) when I’m writing this by the way.) You won’t see that the gorgeous “table” in all our photos is actually a tiny painted piece of wood or that the gorgeous “marble slab” is actually a faux design printed on a sheet of contact paper. You also won’t ever see a photo of us in what we really wear around the house all day. (Yoga pants and old t-shirts with holes for the win right?)
But what you will see are posts that we’ve poured our hearts into, recipes we really love, and sponsored posts from brands we enjoy (that also pay the bills and help keep the lights on.) You’ll see us grow as photographers, grow as writers, grow as cooks. You’ll see us miss self-imposed deadlines as life gets in the way. You’ll see us be super excited every time someone leaves us a “like” or a comment, or when we reach a new follower milestone. You’ll also see us on social media all. the. time. (Because it’s basically our full time jobs.) You’ll see us curate our blog content so only our best work is shared with the world. And last, but not least, you’ll see us constantly striving to learn and be the best food bloggers that we can be because we seriously love it and wouldn’t have it any other way.
So know that even if you think our lives are “Pinterest perfect,” we are actually just like you and your family (only maybe with a lot more fake kitchen props.)
Now, you’re probably wondering what this whole post has to do with this chicken recipe. Well, probably not very much other than the fact that this is what I make for dinner when I don’t feel like being Pinterest perfect. But pin and make this chicken dish any ways. Baked Italian Chicken

- Total Time: 35
Ingredients
- 2 large chicken breasts
- 1 packet dry italian dressing mix
- 1/2 tsp garlic powder
- 1/2 cup shredded parmesan and romano cheese
- 1 egg
- 1/4 cup flour
Instructions
- Preheat oven to 400 degrees.
- Rinse the chicken breasts and pat them dry.
- Combine the italian dressing mix, garlic powder, and parmesan cheese in a medium bowl.
- In a separate bowl, crack and whisk the egg.
- In a third bowl, add the flour.
- Bread the chicken by dredging each breast through the flour, then egg, then cheese/dressing mixture until fully coated.
- Place the chicken breasts in a greased baking dish and bake for 30 minutes, or until the internal temp reaches 165.
Notes
- This recipe can easily be doubled or tripled for larger households. Sliced italian chicken is great on salads or with a bowl of pasta. It also freezes well for later!
- Gluten-free: Most of the store-bought Italian dressing mix packets contain gluten, but it’s really simple to make your own mix. I like this recipe. (Use about 4 teaspoons of the mix in place of the packet.) You can also either skip the flour in the dredging process or use corn starch or GF flour instead.

You ALSO won’t see the many many recipes that are perfect FAILS – while we are trying to get it “just right” for our readers. AND….. you won’t see what we really eat while we are trying to get posts out the door – somewhere I have a photo of what happens when you leave eggs boiling on the stove while you go to “just do a few little things to a post before it goes out”. Eggs that boil down till there is no water are NOT pretty! lol. !!!

Haha, so true!! I remember boiling eggs until they burst once. It is not pretty! Now I use the method where you heat them, then cover and take them off the stove because my husband says I can’t be trusted to not leave them unattended. hahahaha.

Loved the recipe and it’s a keeper. We have my 85 year old father living with us now for 13 years and he’s always been a meat potato man and veggie and my husband is “what ever is on the table”, never any complaints.
