This summer I’ve been really loving on salads. Our garden has been producing a bumper crop of greens with all the rain we’ve had, and I’ve been on a health kick, so I’ve been loving lunches of giant salads during my week days. Because of all the salads, I’ve been going through a TON of salad dressing. (Dressing is really the point of the salad right?) So, I thought it would be fun to put together a round up of a ton of different DIY salad dressing options today!

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Monday: Salad Bar Night! Pick your favorite dressing recipe above and gather your favorite ingredients for a salad bar buffet!
Tuesday: White Enchilada Casserole from Gimme Some Oven (gluten-free if using gf tortillas and gf flour, vegetarian option)
Wednesday: Spicy Thai Peanut Chicken Wraps from The Chunky Chef (gluten-free if you use gf sauces & tortillas, vegetarian option) – she used pre-made name-brand ingredients, but the concept is easily re-produced with other similar ingredients or you can cook your own chicken.
Thursday: Turmeric Chicken & Quinoa from Cooking Quinoa (gluten-free-just double check your fish sauce, vegan/vegetarian option)
Friday: Pizza Night! Mexican Pizza from Love Bakes Good Cakes (gluten-free if using gf tortillas, vegetarian option)
Saturday: Date Night – Eat Out.
Sunday: Y.O.Y.O. (You’re on your own.)

I’ve been slacking so much in making my own dressings because I wasn’t eating salad fast enough to finish the dressing before it went bad. I’m excited to slowly try all of these!

I’ve never once in my life made salad dressing from scratch. Haha–it kind of never occurred to me, but this sounds like a great strategy to get more variety out of your salads when you’re not limited to what’s on the shelf!

Really? Oh you’ve been missing out! It’s so simple and (my favorite) so CHEAP! Plus I think the taste is better since you don’t have all the preservatives or extra sugars and such that store bought dressings pack in. I super recommend trying it. 🙂
